Camping Recipe: Easy Enchiladas

Ingredients

  • 2 tbsp. oil
  • 1 red bell pepper
  • ½ red onion
  • 4 cloves garlic
  • 1 tbsp. cumin
  • 2 tsp. salt
  • 14 oz. can enchilada sauce
  • 2 c. cheese
  • 1 c. cooked black beans
  • 4-6 flour tortillas

Instructions

  1. Wash and dry all your produce.
  2. Cut the bell pepper into strips and the red onion into half-moons. Mince the garlic.
  3. Add 24 coals to your fire and wait until they are heated through.
  4. Over medium heat, add a drizzle of oil to your Dutch oven.
  5. Toss in the peppers and saute until browned. Add the onions and cook until translucent and soft.
  6. Stir in the garlic, cumin, and salt until thoroughly combined and fragrant.
  7. Remove from the heat and move the veggies to a bowl.
  8. Pour 1/4 c. of enchilada cause to the Dutch oven.
  9. Layer in the onions and peppers to the middle of a flour tortilla, add a spoonful of black beans, and top with cheese.
  10. Gently roll the tortilla and place into the Dutch oven with the seam down. Repeat until the Dutch oven is full.
  11. Cover with the remaining sauce and cheese.
  12. Replace the lid on the Dutch oven and return to the heat. Add 15 coals to the top of the lid and set the Dutch oven on the grill grate instead of directly on the coals.
  13. Cook until the cheese is melted thoroughly.
  14. Serve warm and top with jalapenos, lime wedges, and cilantro.
